Walnut Pear Pie Cocktail with Coopers’ Craft Bourbon

A Walnut Pear Pie Cocktail is the perfect fall to winter cocktail to be enjoyed with Coopers’ Craft Bourbon. A bourbon that brings great caramel and fall flavors to the party!

 

When you think of fruit during the fall and winter, one of the first that comes to our minds are pears. I am sure most people immediately think of apples, but that’s because they are only around for a little while, but pears are around for much longer, through most of the winter. That is what inspired this cocktail using Coopers’ Craft Bourbon, Brown-Forman’s newest bourbon in 20 years — now available in Nebraska!

Coopers’ Craft

Coopers’ Craft was created to honor the Brown-Forman Barrel makers. Since 1945, they have been the only major distiller to own a new barrel cooperage and raise their own barrels, allowing complete control of the bourbon making process from start to finish. Master coopers use a proprietary toasting and barrel making process to deliver unique and award winning bourbons.

Coopers’ Craft Bourbon

Coopers’ Craft Bourbon has two expressions, the 82.2 proof, and the 100 proof Barrel Reserve! Both bourbons begin with the same spirit, but are aged using different wood techniques resulting in different profiles.

 

The 82.2 is aged in a traditional white American oak barrel. After aging, the bourbon is run through a beech and birch wood charcoal filtering process to make it extra smooth. The 82.2 is the first bourbon in 20 years (released in 2019) and was produced first in 2016 by Master Distiller Chris Morris.

The tasting notes for the 82.2 is that it is a sipping bourbon with lemon custard and baked apple layered over a bed of toasted and fresh oak seasoned with a light dusting of spice.

 

I got to do a bourbon tasting for this collaboration, and I can tell you both were smooth and so delightful! But, in this case I felt the flavors were perfect for a fall and winter cocktail like we made for you here!

The 100 proof Barrel Reserve bourbon is aged in their one-of-a-kind chiseled and charred American oak barrel. It is robust and complex. By using their chiseling process, they expose the bourbon to 50% more wood in the barrel.

 

The flavor profile for the 100 proof is caramel and cotton candy coated apples, pear and citrus fruit over vanilla wafers dusted with cinnamon. So, we definitely had a winner with this bourbon.

So you can see why we felt inspired for this pear cocktail. We have had past winters where we have posted pear cocktails such as our Pink Pear or our Rosemary’s Pear. Apparently I need to work on Pear cocktail names!

 

Pear Cocktail

So with holidays just around the corner, we wanted a festive drink that was comforting and used what is in season! This spiced pear simple syrup is what compliments the Coopers’ Craft Bourbon so much. When we had the 2 together, we said, well, we have a winner. But 2 ingredients does not a cocktail make!

So, we added some lemon juice for acid, some walnut liqueur for a rich nutty note and then bitters. Because bitters are the salt and pepper of cocktail making!

 

We felt this one was super cozy, like a bourbon hug!

Recipe Ingredients

  • Coopers’ Craft Bourbon (Barrel Reserve, 100 Proof)
  • Spiced Pear Simple Syrup (instructions below)
  • Lemon Juice
  • Walnut Liqueur
  • Aromatic Bitters

The combining of these ingredients just felt natural, and tasted like a pear walnut pie. (If you have never had one of those, you need to fix that!) When making the cocktail, we gave it a good shake with ice and the result is heavenly, it really is like fall in a glass. (Which is how I described the Coopers’ Craft Bourbon, remember?)

So, this cocktail comes full circle, and we think you can definitely enjoy this all winter long for special holiday events, or just an everyday weeknight at home!

This Walnut Pear Pie Cocktail is full of flavor from the Coopers' Craft Bourbon and wonderful fall and winter flavors this cocktail has, cheers!

Ingredients

Spiced Pear Syrup

  • 1/2 cup Pear Juice
  • 1 cinnamon sticks
  • 2 cloves
  • 1-2 allspice berries
  • 1 star anise

Walnut Pear Pie Cocktail

  • 1.75 ounces Coopers' Craft Bourbon - Barrel Reserve, 100 Proof
  • .75 ounce Spiced Pear Syrup
  • .25 ounce Walnut Liqueur
  • .50 ounce lemon juice
  • 2 dashes Angostura bitters

Instructions

Spiced Pear Syrup

  1. Combine pear juice and spices in a small saucepan. Bring to a boil.
  2. Strain out spices and let syrup cool.
  3. Store in refrigerator for up to 2 weeks.

Walnut Pear Pie Cocktail

  1. Combine all ingredients with the Coopers' Craft Bourbon, (we used the Barrel Reserve, 100 proof) with ice in a shaker.
  2. Shake to combine, strain into rocks glass with ice.
  3. Garnish with lemon peel or pear slice if desired.
  4. Cheers!
